Receta: empanadillas / Recipe: small paties


El fin de semana hicimos empanadillas en casa con la receta de mi abuela. Lo pasamos genial porque nos reunimos en la cocina mi marido, mi hija, nuestros amigos Sunny y Álvaro y yo. Si os gusta cocinar entenderéis lo divertido y agradable que es hacerlo además en buena compañía.

 

The weekend we cooked pasties at home using my grandmother’s recipe. We had a great time because we got togheter in the kitchen my husband, my daughter, our friends Sunny and Álvaro and I. If you like to cook you will understand how fun and enjoyable is to do it, even more in good company. 

Empanadillas de atún / Meat pasties

 

 
Las empanadillas salieron buenísimas y no son nada complicadas de hacer, sólo requieren un poco de tiempo. Hicimos empanadillas de atún y de carne. La masa es la misma, pero se cocinan de distinta forma.

 

The pasties  were very good and they are very easy to do, you just need a little time. We cooked ome pasties stuffed with tuna and some with meat. The dough is the same for both, but they are cooked in a different way. 

 
Ingredientes para la masa:
500 gr. de harina
125 cc de agua fría
125 cc de agua caliente
125 cc de aceite
un huevo batido
sal

 

Ingredients for the dough:
500 gr. flour
125 cc cold water
125 cc hot water
125 cc oil
a beaten egg
salt
 
 

Rellenos.
Para las empanadillas de atún: atún, pimiento del piquillo y huevo duro, todo bien troceado.
Para las empanadillas de carne: pollo troceado y huevo duro. Yo empleo la carne de carcasas de pollo que cocino previamente haciendo sopa, pero podéis emplear restos o lo que tengáis en casa, ya cocinado.

Filling.
For the tuna pasties: tuna, “piquillo” peppers (or roasted red peppers) and a hard-boiled egg, all chopped.

For the meat pasties: chicken and a hard-boiled egg, all chopped. I normally use the meat of  chicken carcasses I have previously boiled for a soup, but you can use meat remainders or what you have already cooked at home.

Empanadillas de carne
 
1. Se pone en un cuenco un tercio de la harina.
2. Añadimos sin dejar de remover y en este orden, la sal, el aceite caliente, el agua hirviendo, el agua fría y el huevo batido.
3. Se va agregando harina hasta que tome la consistencia que nos permita amasar. Debe quedar elástica, no dura, así que quizás no haga falta utilizar toda la harina.
4. Amasamos sobre una superficie enharinada para que no se pegue la masa.
5. Cogemos trocitos de masa y los extendemos con un rodillo, añadimos el rellleno, doblamos por la mitad y cortamos la masa sobrante con un cuchillo dándole forma de empanadilla.
6. Las empanadillas de atún se colocan en una bandeja, se pintan con huevo batido y se hornean unos 30 minutos a 180º.
Las empanadillas de carne se fríen en abundante aceite muy caliente y por poco tiempo, hasta que estén doradas. Se sirven acompañadas de azúcar.

 

 

1. Put in a bowl one third of the flour. 
2. Stirring constantly add in this order, the salt, the oil, the hot water, the cold water and the beaten egg.
3. Add the flour slowly until it has the consistency that allows us to knead it. It must not be hard and must be elastic, so perhaps it is not necessary to use all the flour.
4. Knead the dough on a floured surface. 
5. Take little pieces of the dough and spread with a rolling pin, add the filling, fold in half and cut off the excess dough with a knife and shape it.
6. Then the tuna pasties are placed on a baking tray, coated with beaten egg and baked approximately 30 minutes at 180 º.

The meat pasties are fried in plenty hot oil but for a short while, until golden brown. Usually served with sugar.

  1. Que ricas!!!! como buena argentina me encantan las de carne 🙂 y también las de atún y las de pollo y las de jamón y queso, etc me gustan todas!!! No soy muy coninillas, pero en cuanto tenga un ratín te robo la receta y pruebo de hacerlas mmmmm que rico
